Too much heat. If the chocolate is COMPLETELY MELTED while on heat then you’ve already gone too far. Low heat until it’s partially melted then stir off heat using the residual heat in the bowl and the rest of the chocolate until melted completely.

When melting chocolate always be sure that your bowl is 100% dry and larger than the pot of boiling water so that the steam doesn’t get to the chocolate. Even one drop of water will ruin melting chocolate – it’s very annoying.

I read the title and was like ‘huh, I’ve melted dairy milk loads and it’s never happened to me’, only to read the comments from so many people who were so confused by “Dairy Milk” 😂 I took for granted that everyone would know it’s like the most well known bar of chocolate in the UK 🤣 This isn’t a dig at anyone, just genuinely made me laugh 😂😂😂

There was probably moisture in the bar and with the pot covered that moisture condensed on the cover and dripped into the chocolate. It takes very little moisture to do this.
